Wine
Castle Rock Estate Shiraz is grown in Porongurup, the smallest locality in the Great Southern wine region. It is known for its premium cool climate conditions.
The grapes are open fermented with plunging as needed to extract tannins and build complexity. Post ferment, the wine matures in new and seasoned French oak for 15 months with periodic racking.
Deep ruby, Castle Rock Estate Shiraz has plum flavours with firm tannins and a peppery thread woven throughout. Cellaring potential is 10 years.
